After a hard day's work, I like nothing more than to unwind at my local izakaya, filling my tummy with a plateful of chicken throats, garnished lovingly with a light sprinkling of gristle. I'll probably finish up with a couple of chicken heads and some tasty minch, all washed down with a glass of goat's blood.
